Ninjago Cake Tutorial

I made this Ninjago cake for a co-worker's grandson.  It was a pretty simple cake to make, but I ended up using LOTS of fondant.  The cake was eight inches in diameter and about six inches high by the time that I finished.

I started by baking a dense vanilla cake, since I knew that the fondant would end up being fairly heavy and I didn't want it to collapse (that would be terrible!).

I baked five layers and leveled four of the layers.  I left the fifth layer rounded to give the cake a slightly rounded top. Then I filled and frosted the cake and covered it with yellow fondant.  Since my fondant wasn't super smooth, I rolled and cut another piece of yellow fondant to use as the face and attached it with some piping gel.

Next, I rolled out two rectangular pieces of blue fondant, rolled one edge under on each rectangle, and attached them to the sides of the face.

Then I cut a long strip of blue fondant to go around the cake.  I folded over each end of the strip to make a second pleat on each side that slightly overlapped the first.  I cut off the excess around the bottom.

Next, I rolled up a piece of fondant and added an arch of fondant over the front/top section of the cake (to look like a pleat when I added the top piece of fondant).

For the top portion, I rolled out a large piece of blue fondant and shaped it around the face by rolling it under.  Then I pulled the sides back, creating pleats and rolling the edges under, bringing the ends together in the back near the bottom of the head.  I cut away all of the excess so that there would be space for my knot later on.  (Sorry for all of the corn starch in the photos... That's what I was using to roll out my fondant, and it made quite a mess!)

For the bottom portion of the mask, I rolled out a long rectangle of fondant and folded it over itself a couple of times to create pleats.  Then I shaped it around the face, attaching it with piping gel and tucked the ends under the edge of the cake.

To make the eyes, I found a picture online by Googling "printable Ninjago eyes."  I think that I ended up downloading the first one that I stumbled upon.  Then I resized it to be 6x3 inches (the approximate dimensions of the face of this cake) and I printed it out.  I cut out one of the eyebrows and used it as a template to cut the eyebrows for the face.  For the eyes, I used a frosting tip to cut circles of black fondant.  Then I used the wax paper transfer method (like I used for my polka dot cake in my previous post) to attach the eyes/eyebrows to the face.  If you're not familiar with this method, here are the steps:

* Place printed Ninjago face picture under a piece of wax paper.
* Put a light coating of vegetable shortening on the wax paper.
* Place the eyes and eyebrows onto the wax paper.
* Spread a small amount of piping gel onto the eyes/eyebrows.
* Pick up the piece of wax paper and place it onto the cake where you want the eyes to be.
* Peel the wax paper away.

I added a small dot of white fondant to each eye.

The last piece that I added was the knot/tails.  For the tails, I cut out two eightish-inch long pieces of fondant with pointy ends.  I stuck one end of each tail under the back/bottom of the cake, and I brought the other end around the side so that the tails could be seen from the front of the cake.  Then I pinched them together in various places to add some dimension.  For the knot, I rolled out a strip of fondant, rolled the sides under, and created a ball shape.  Then I pressed it onto the back of the cake (where the mask and tails came together), attaching it with piping gel.

And that's it!

Easy Polka Dot Application/Spacing

I love polka dots, but I absolutely hate the tedious process of sticking tiny bits of fondant to a cake.  A few weeks ago, I visited Jessica's blog at and read about her wax paper transfer method (which I was able to use a few weeks ago to apply the Boston skyline to another graduation cake) so when I received a request for a graduation cake with polka dots, I knew that the wax paper transfer method would be the best way to go.  It turned out to be very quick and simple with no need for marking the cake or measuring space between dots. Here's how it works:

First, I Googled "polka dots" and found a pattern that was spaced the way that I wanted it to be.  Then I printed the pattern, cut it out to be the same height as the part of the cake that I was going to be covering with dots, and taped it to my countertop.

Next, I cut a piece of wax paper around the same size as the patterned paper and laid it on top of the patterned paper.  Then I brushed the wax paper with a thin layer of vegetable shortening.  (Believe it or not, I use this brush exclusively for shortening, which is probably a good thing since it is nearly impossible to remove all of the greasy residue!)

Once the wax paper was prepared, I rolled out some black fondant and used one of my frosting tips to cut out the dots.

 Then I placed the dots on the wax paper, on top of the dots on the template.

 Once the wax paper was covered with dots, I brushed a thin layer of piping gel on each dot, picked the wax paper up (the shortening prevents the dots from falling off), and then pressed the wax paper with the dots onto my cake.  Then I peeled the wax paper away and used it to apply my next round of dots, until my entire cake was covered.

I am a super slow cake decorator and this took me no time at all.  It also prevented me from having to measure (which I hate), or from "eyeballing" the placement of the dots... which I also hate. :-)

Fish Cake Tutorial

About three months ago, I saw a photo of a trout cake and decided that my dad absolutely NEEDED that cake for Father’s Day, so I began searching for a tutorial for a similar cake.  I stumbled upon several tutorials for fish cakes, but I really couldn’t find what I was looking for, so I decided to give it a try on my own (yikes!) and hope for the best.  I’m hoping that this tutorial will prevent someone else from searching endlessly on Google or Pinterest, to no avail, for a fish cake tutorial like I did.  :-)

I used a 15x11 inch sheet cake pan and about 12 cups of chocolate cake batter to make this cake and the corresponding “bait buckets” (cake cups).  This was about two cups more batter than my “Baking Bible” recommended for the pan, but I increased the time by about 10 minutes, and it ended up producing a dense, thick cake.  While my cake was baking and cooling, I worked on the board so that it would have time to harden before placing the cake on top.

The  Board
My goal for this cake board was to make it look like the fish had just been caught and thrown upon an old camp countertop, ready to be cleaned and filleted.  There are some simple variations to my technique that could produce a smooth plaque surface, if you want your cake to look more like a trophy fish on a plaque, or one of those creepy talking fish that people sometimes hang on their walls (Those things creep me out!).

To decorate this board, I used a 19x14 inch cake board for the foundation.  I began by covering the board with foil (since I wanted to reuse the board), and then brushed a thin layer of vegetable shortening over the top and sides of the board.

I used a little bit of brown food coloring and mixed it with my white fondant, so that it was slightly marbled.  Then I took some chocolate fondant and rolled both pieces into long, snake-like sections.  I twisted them together, pulled/stretched the fondant a few times, and then rolled it out.

I used a wood grain impression mat (which I ordered from and pressed it down onto the marbled fondant, trying to match the knots of the wood grain with the darker sections of fondant.  If you don’t have an impression mat, you could easily score the fondant with a sharp knife, creating random curved lines (the wood grain), or you can skip this step if you want a smooth wooden surface. 

Once you’re happy with the texture of the fondant, cut the “boards” to your preferred length/width.  Mine were around two inches wide, and the length was 9.5 inches for the longer boards, and 4.75 inches for the shorter boards (this doesn’t have to be precise, since the fondant is stretchable).  I added each board right after I finished making it so that the fondant was still pliable.  This allowed me to stretch it down over the edges.  Once I covered the entire board, I rotated it several times to make sure that there were no shiny pieces of foil peeking through the cracks.  Wherever I saw foil, I just pushed the boards together, since the fondant was still fairly pliable.

I considered leaving the board this way, but then I decided that I wanted the grooves to have a little bit more definition, and I wanted it to be shiny, as though the wood had been lacquered.  To achieve this effect, I mixed a small amount of black and brown gel food coloring with some piping gel and painted it over the entire board.  (I probably would have used lemon extract instead of piping gel for this part, but I ran out... Oh well.)  To make the board look super shiny, I sprayed it with edible clear glaze, which is probably one of my favorite products (I’m always looking for reasons to use it).  I left the board out to dry over night, and in the morning, it was smooth and firm... and shiny, of course!

The Cake
12 cups of cake batter

cardstock, cardboard, or stiff paper (if, like me, you’re not confident in your ability to cut a basic fish shape out of cake)

Once the cake had been baked and cooled, I removed the cake from the pan and cut out the fish.  I didn’t bother to level it, since the rounded top actually worked to my advantage.

I have no artistic ability... none, whatsoever.  I can barely draw stick people, which means that drawing/cutting out a fish was absolutely out of the question, so I Googled “trout drawing,” and stumbled upon this image:
Since I didn’t have the capability of printing the picture to be the exact size of the cake pan, I ended up taping two pieces of cardstock paper together to be the size of my pan, and then I brought the paper to school so that I could project and trace the image onto the paper.  You’re probably thinking that this is ridiculous, since the basic outline of a fish is pretty simple, but I really truly cannot draw.  I traced the fish outline diagonally across the paper so that I could use it to cut the maximum amount of cake.

Once I got home, I cut out the cardstock fish template, laid it on the cake, and cut around the template with a serrated knife.  The cake that I used was fairly dense, so I didn’t have any problems with it crumbling as I cut, but if you choose to make a less dense cake, you may want to freeze it for a couple of hours and then cut it while its frozen.  Once I had the basic fish shape cut out, I returned the remaining cake to the pan to be used later for the “bait buckets.”  Then I used my fish template to cut out a piece of cardboard to use under my cake (I cut the cardboard a little bit smaller than the original template so that the cardboard wouldn’t stick out from under my cake).  I ended up leaving a solid piece of cardboard under the head instead of cutting away the mouth, since this seemed like the weakest part of the cake.  I covered the cardboard with frosting and put the cake on top.

Next, I used my knife to round the edges, all the way around the fish.  Looking at it from all different angles helped me to see whether there were any strange lumps or divots that needed fixing.  Then I poked a hole where I wanted the eye to go, and covered the cake with frosting.  Since the cake was a little bit crumbly, I melted my frosting in the microwave for a few seconds for easier application.  This prevented it from pulling the cake apart while spreading the frosting. 

In the picture of the model cake that I liked, I noticed gill ridges.  To create these ridges, I rolled two pieces of fondant (one thick and one thin) and stuck them onto the cake in a crescent shape.  I rolled an additional piece to accentuate the eye cavity.  In hindsight, I could have added the lips at this time as well, but I ended up attaching them later.  Now onto the fun part: covering the fish with fondant!

This was the part that was the most fun, but also the part that I was most stressed out about.  I wasn’t sure whether the imperfections would show through the fondant, but I was able to roll my fondant out to a normal thickness without the little lumps and bumps from the cake showing through.

I had a difficult time deciding whether I wanted this fish to have scales.  I have never noticed scales on a trout, since they look so smooth, but from what I have read, they do have fine scales.  So in the end, I decided that I wanted scales on the top half of the body.  I rolled the fondant out and used my fish scale impression mat only on the top half.  I pressed down lightly so that the scales would not be very pronounced.  (If you want scales but don’t have an impression mat, you could press half of a round frosting tip into the fondant to create little crescent scales).  

Then I used my rolling pin to lift the fondant onto the fish and smoothed it out with my hands.  In places where the scales were more prominent, I smoothed them out a little bit with my hands.  I also tucked the fondant under the bottom of the fish as well as I could.  I carefully worked the fondant into the fish’s mouth and eye socket, and worked it in around the gills.  Then I tinted a small piece of fondant yellow and rolled it into a ball for the eye.  I added a small circle of black fondant to the eye (you could just paint it on, if you would prefer), and I sprayed it with edible glaze to make it shiny (painting it with piping gel would also achieve this effect).  It was at this point that I realized that I forgot to add the fish’s lips before I covered it with fondant, so I rolled out to pieces of fondant and shaped them around the fish’s mouth, securing them with piping gel.  Then I sprayed the under side/belly with edible pearl spray (luster dust would work for this), waited a few minutes for it to dry, and transferred my naked fish onto the cake board.

Next, I began painting the fish.  I used a little bit of piping gel and tinted it with black food coloring and then carefully painted the inside of the mouth.  Then, I put three separate dollops of piping gel on a plate and colored one very light pink, one green, and one yellow.  I cut my sponge into three pieces (one for each color) and sponged the green coloring on the top and back of the fish.  Then I sponged the pink along the side of the fish, just below the green.  I used the yellow to blend the pink and the green.  If you have an airbrush, you could use that instead of the sponge... I’m sure it would be much easier.  I’ve been trying to convince my husband to buy me an airbrush for my birthday. :-)  While the “paint” was drying, I mixed some black food coloring with some lemon extract and then I painted some spots on the fish.  For the smaller spots, I used a toothpick.

The last pieces that I added were the fins.  I decided to use gumpaste for the fins instead of fondant, since the type of fondant that I was using stays soft for a long time.  Believe it or not, I opted to freehand the fins instead of using a template!  I rolled the fondant fairly thin, cut out the tail fin, checked to see how it would fit, and then made modifications.  Once I got the size and shape right, I used a toothpick to press ridges into the fin and I used a knife to cut little wedges out of the end of the fin.  Then I sponged some green paint onto the base and center of the fin, and yellow paint onto the tip, and attached it to the fish with piping gel.  I ended up removing the last inch or so of the body (the part that kind of looked like the handle of a baseball bat) because it looked a little funny with the tail fin.

I created, painted, and attached the rest of the fins in the same manner.  I left an extra bit of gumpaste on the fins that were going onto the top and bottom of the fish so that I had enough to fold under and stick the fins to the fish.  I used rolled up pieces of paper towel under the fins to keep them in place until they had hardened.  Once they were all in place and the paint had had time to dry, I used a toothpick to paint small dots on each fin.  Then I sprayed one last coat of pearl spray over the white parts of the fish, and a coat of the clear glaze spray over the colored part of the fish. 

The Lure
gumpaste or fondant

The lure was pretty simple to make, as you can probably tell.  I started by tinting some of my white gumpaste gray and using the clay extruder to make a very fine string of gumpaste.  I cut the string into three small sections and made a hook out of each section.  While the hooks were drying, I used some white gum paste to make the lure.  I started with a ball and then flattened it into a long oval, then I poked a hole in each end with a toothpick and then let it dry for a few minutes over a pen to give it a slightly rounded shape.  Then I used some edible metallic silver paint to paint half of the lure, and I added a little bit of blue food coloring to the silver to make a metallic blue color, which I used to paint the other half of the lure. 

While the lure was drying. I moved the hooks to the cake board to assemble the treble hook.  I attached them using a tiny amount of piping gel, and I used a scrap of gray gumpaste to help keep it together.  Then I attached the lure to the board with piping gel, onto top of the top portion of the treble hook.  The last piece I added was the line.  I did this by pushing fondant through the smallest hole in my clay extruder (luckily it was pretty soft, so it wasn’t difficult to push it through).  I let it fall naturally, and then just pushed it around to where I wanted it to be.  Once it looked the way I wanted it to look, I sprayed a thin layer of the clear glaze to keep it in place, which prevented me from having to anchor it down with piping gel.

I couldn’t stand to see so much cake go to waste after I finished my cake project, so my husband suggested that I make cake cups (not cupcakes.  Cake cups.).  I started by filling the cups two-thirds full with crumbled cake.  Then I created a little well in the center where I spooned a dollop of chocolate frosting, and then covered it with more cake crumbles.  Since I had some Oreos in the cupboard, I decided to crush them up and put them on top, but cake crumbles would’ve worked equally as well.  Then I used red, black, and brown food coloring to color my vanilla frosting and piped the worms onto the “dirt” using a round frosting tip.  I sprinkled extra Oreo bits to cover the ends of some of the worms so that they would look like they were coming out of the dirt. That’s it.  Super simple... and no cake went to waste.  :-)

Super Easy Hat Cake Tutorial

I made this cake for my mother-in-law for Mother’s Day this year.  Since she is a member of the Red Hat Society, I thought that a red hat would be appropriate for this occasion.  This cake was quick and easy to make (especially since I cheated and used a cake mix!).  In fact, it will probably take longer to write this tutorial than it took to make the cake!
·      I made this cake with one red velvet cake mix and a can of cream cheese frosting, but you could always go the extra mile and make a homemade cake!
·      Wilton Sports Ball Pan (6-inch diameter)
·      six-inch round cake pan
·      1 box of red Wilton Rolled Fondant
·      piping gel, edible glue, water, or something to adhere the fondant

To start, I used one red velvet cake mix and split in half between the Wilton Sports Ball Pan and a six-inch round cake pan, and baked them according to the directions for each pan.

While the cake was baking, I made the brim of the hat so that it would keep its shape when I added the cake.  To make the brim, I rolled out some red fondant onto a piece of parchment paper and used a 12-inch cake pan and a pizza cutter to cut out a large circle.  Next, I used the parchment paper to transfer the circle to the cake board.  I used a six-inch cardboard cake circle to make an indentation in the center of the fondant circle so that I knew where the top part of the hat would be.  Since I wanted the brim of my hat to be ruffled, I rolled up pieces of paper towel and placed the pieces under the edge of the circle.

While the cake was cooling, I made the rose so that it would also have time to harden for a little while before adding it to the cake.  To make the rose, I rolled out a long, thin strip of red fondant (about four inches wide and 18 inches long).  Then I folded the strip in half lengthwise, so that it was about two inches wide and 18 inches long.  Next, I “painted” the bottom length of the strip with piping gel and rolled it up, pleating it periodically, until I got to the end of the strip.  Unfortunately, I didn’t take pictures of this process, but it is pretty simple, so you can probably get the idea from the picture.  If not, here is a link to a tutorial from another site that shows a very similar process.  When I got to the end of the strip, I cut away the excess fondant and used small pieces of paper towel to help the flower hold its shape as it dried.

Once the cake had cooled, I leveled each layer.  (I think that it’s easiest to level the ball cake when it is still in the pan.)  I leveled the six-inch round layer so that it was about an inch tall.  This will determine the height of your hat, so adjust the height to meet your needs. :-)

Next, I attached the round layer to a six-inch cardboard cake circle with a dollop of frosting, frosted the top of that layer, and then added the domed layer. I covered the whole cake with frosting and, and then added the red fondant.  Then I placed the cake onto the circle that I made for the brim.  Remember Pogo Balls?...

The next step was to add the ribbon around the base of the hat.  I used three separate strips of fondant for this step.  First, I rolled out a long, thin strip, about 19 inches long and two inches wide.  I folded one edge of the strip under, so that it would have a smooth, ribbon-like edge, and then I used piping gel to attach it to the base of the hat.  I did the same thing with the next two strips of fondant, making each one a little bit smaller than the previous one so that they would overlap.  When I attached them to the hat, I put the part where the ends of the strips met in the location that would be covered by the flower later.

Once the ribbon strips were in place, I attached the flower with a little bit of piping gel.  It was heavy enough that it wanted to slide at first, so I held it in place for a minute, until it was dry enough to remain in place.

Next, I made the leaves.  To make the leaves, I rolled out a four-inch square of fondant and pinched two of the opposite corners together in the middle.  I cut this part in half to make the two leaves.  (Again, I didn’t take any pictures of this step, so you may need to refer to the tutorial link from the flower - sorry! - I will come back and add pictures for this step later.)  I attached the leaves to the hat with piping gel.  Since I made the leaves immediately before attaching them, they were pliable, which made it easy to shape/adjust them once I attached them to the hat.

I wanted the rose and ribbon to have a satiny finish, so I used a technique that I saw in another tutorial.  I started by painting some vegetable shortening onto the flower, leaves, and ribbon.  Then mixed some red petal dust with some pearl luster dust (50/50).  Next, I brushed the dust mixture onto the flower, leaves, and ribbon.  Edible pearlescent paint or red luster dust would have worked well for this, but I didn't have any... Oh well. :-) 

The last step was to remove the paper towels from the brim of the hat.  By this point, it had hardened enough to hold its shape.  And that’s it!  Easy peasy.  :-)
